quick easy meal for lunch or dinner

  • Preheat your cast iron or stainless steel skillet on high heat.

  • Dice 1/3 of a white onion and one large package of mushrooms.

  • Add 3 tablespoons of butter to the skillet with your diced garlic and onions. Sauté for 1-2 minutes, then add mushrooms and reduce to high/medium heat.

  • Continue to sauté and add salt/pepper to taste with 1 tsp of paprika.

  • Reduce heat slightly and allow veggies to continue to cook down, allowing the water to evaporate (about 15 minutes).

  • Once all the liquid cooks out, remove from the heat.

  • Slice the baguette open and use the remaining tablespoon of butter to spread onto the bread.

  • Scoop the mushroom mixture ontop of the butter on the bread.

  • Top with desired cheese and place in the toaster oven at 350 degrees for 10-12 minutes, or until bread is crunchy and cheese is a little toasty.

  • Remove from the toaster oven, plate, and top with ketchup, garlic aioli, and green onions. Serve immediately.
