Our take on the famous Polish street food, Zapiekanka Recipe.

INGREDIENTS
serves 2
1 Skillet - Cast Iron or Stainless Steel
Baguette
10 oz Mushrooms, diced
1/3 of a White Onion, diced
4 tablespoons of Butter
2 tablespoons Garlic
Cheese of Choice (Cheddar, Havarti, Mozzarella, Gouda)
1 cup of Green Onions
1 tsp Paprika
Salt/Pepper to taste
Ketchup
Garlic Aioli
INSTRUCTIONS
quick easy meal for lunch or dinner
Preheat your cast iron or stainless steel skillet on high heat.
Dice 1/3 of a white onion and one large package of mushrooms.
Add 3 tablespoons of butter to the skillet with your diced garlic and onions. Sauté for 1-2 minutes, then add mushrooms and reduce to high/medium heat.
Continue to sauté and add salt/pepper to taste with 1 tsp of paprika.
Reduce heat slightly and allow veggies to continue to cook down, allowing the water to evaporate (about 15 minutes).
Once all the liquid cooks out, remove from the heat.
Slice the baguette open and use the remaining tablespoon of butter to spread onto the bread.
Scoop the mushroom mixture ontop of the butter on the bread.
Top with desired cheese and place in the toaster oven at 350 degrees for 10-12 minutes, or until bread is crunchy and cheese is a little toasty.
Remove from the toaster oven, plate, and top with ketchup, garlic aioli, and green onions. Serve immediately.
